Kanada-Ya Ramen at The Exchange TRX

[Non-halal] Truffle Ramen, anyone? Kanada-Ya Ramen has opened a new branch at The Exchange TRX. 

Originating from Fukuoka Japan, Kanada-Ya offers authentic tonkotsu (pork bones) ramen and then some.

Voted the best ramen in Fukuoka for a number of years, Kanada-ya is equally popular in the UK and Singapore and is known for their truffle ramen.

 It was also voted as the No.1 ramen restaurant in London by The Telegraph.

Kanada-Ya Ramen at The Exchange TRX 

Kanada-Ya made its way into Malaysia with the opening of the first branch at Gurney Plaza, Penang in early 2023. 

The ramen bar recently opened its second branch at The Exchange TRX – making it more accessible for KL-lites to enjoy the famous ramen. 

Boiled for 13 hours, chef Kanada Kazuhiro’s broth is rich and creamy like any proper tonkotsu should be. 

Besides the classic pork bone-based tonkotsu broth, Kanada-Ya also offers chicken paitan and pork bone broth mixed with black garlic, chilli paste and truffle oil. 

Chashu Tonkotsu Ramen 

We like that Kanada-Ya offers the choice of noodle fitness (soft, standard, hard, extreme) and thickness of broth (light or standard) .

The Chashu Tonkotsu Ramen (RM36.90) was a delight. The standard order comes with three slices of chashu belly, wood ear fungus, spring onion, hanjuku egg and 2 pieces of nori.

We found the broth to be rich and porky – and perhaps more middling in the scale of porkiness-to-mellowness. This is good we don’t get too jelak after a few slurps. 

The chashu slices were tender with a tinge of sweetness, and we thought the “standard” option for the noods was already soft for us. 

Max definitely prefers the “hard” texture for a nice al-dente firmness. 

However, we found the hanjuku egg a bit too sweet for us. 

 No.1 Truffle Ramen in the world? 

Veering off tradition, Kanada-ya’s Truffle Ramen (RM46.90) is one of the top-sellers here.

Limited to only 20 bowls per day, the ramen features tonkotsu soup base mixed with truffle oil, and then topped with two slices of truffle chashu pork belly, black truffle jelly, asparagus, hanjuku egg and a piece of nori.

We found the truffle flavours to be quite prominent when mixed with the truffle jelly, but thankfully not too cloying until unbearable.

The subtle marinade of truffle on the pork belly was a nice touch and the two twigs of asparagus helps to cut through the richness. 

Skip the gyoza 

For starters, we shared the Gyoza – which was a bit disappointing.

For RM13.90, we received four dumplings that looked a bit too skinny and malnourished, and we thought the taste was a bit lacking as well. 

Summary

If you’re craving for a bowl of authentic Hakata-style ramen, Kanada-Ya is definitely worth a stop.
